Yum-Yum Hummus

Last week we did a review of the Cuisinart SmartStick Immersion Blender and talked about all of the different things you can cook up using it. Here's a recipe for hummus I've made a few times from AllRecipes.com using the immersion blender and it's so easy to make and takes just a minute to do it. Eat the hummus with pita chips or I like it as a spread on a sandwich with cucumbers, cheese, sprouts, and red onion.

Easy Red Pepper Hummus

8 Servings

Ingredients

* 1 (16 ounce) can garbanzo beans, drained and rinsed
* 1 tablespoon olive oil
* 1 medium red bell pepper, cut into 1/2 inch pieces
* 1 tablespoon tahini
* 1 fresh lime, juiced
* 1 1/2 tablespoons water
* 1/2 teaspoon salt
* 1/4 teaspoon ground black pepper
* 1/4 teaspoon garlic powder

In a bowl, mix the garbanzo beans, olive oil, red bell pepper, tahini, lime juice, water, salt, black pepper, and garlic powder. Blend using an immersion bender until smooth.

I also make my own pita chips which is cheaper than buying them. Just tear up the pita bread and put on a cookie sheet sprayed with cooking spray. Sprinkle the bread with sea salt and any seasoning like garlic or chili powder.
